Ingredients
2 lbs beef chuck roast, cut into large chunks
1/2 cup soy sauce (low sodium preferred)
1/4 cup brown sugar
2 tablespoons sesame oil
1 tablespoon rice vinegar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/2 teaspoon crushed red pepper flakes (optional, for spice)
1/4 cup water
2 tablespoons cornstarch (for thickening)
1/4 cup green onions, sliced (for garnish)
1 tablespoon sesame seeds (optional, for garnish)
Instructions
Prepare the Beef: In the slow cooker, add the beef chunks. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, garlic, ginger, and crushed red pepper flakes (if using). Pour this mixture over the beef.
Cook: Cover the slow cooker and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender and easily shredded.
Thicken the Sauce: About 30 minutes before serving, whisk together the cornstarch and water to make a slurry. Stir it into the slow cooker to thicken the sauce. Let the beef cook for another 30 minutes.
Serve: Once the sauce has thickened, shred the beef using two forks and toss it in the sauce. Serve the beef over rice, noodles, or in lettuce wraps. Garnish with sliced green onions and sesame seeds.
