Cinnamon Roll Cake is a delicious dessert that combines the best elements of a classic cinnamon roll with the simplicity of a cake. With a soft, buttery texture and a rich cinnamon swirl throughout, this cake delivers warm, comforting flavors that are perfect for any occasion. The cream cheese icing on top adds a tangy sweetness that complements the cinnamon perfectly.

For the Cake:

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
1 cup milk
2 large eggs
1 tablespoon baking powder
2 teaspoons vanilla extract
1/4 teaspoon salt

For the Cinnamon Swirl:

1/2 cup unsalted butter, melted
1 cup brown sugar
2 tablespoons ground cinnamon

For the Cream Cheese Icing:

4 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
23 tablespoons milk (to thin icing)


Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large mixing bowl, beat together the flour, sugar, butter, milk, eggs, baking powder, vanilla extract, and salt until smooth.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • In a separate bowl, combine the melted butter, brown sugar, and cinnamon for the swirl. Drop spoonfuls of the cinnamon mixture over the cake batter, then use a knife to swirl it through the batter, creating a marbled effect.
  • Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, make the cream cheese icing by beating together the softened cream cheese, butter, powdered sugar, vanilla extract, and milk until smooth.
  • Once the cake has cooled slightly, drizzle the cream cheese icing over the top and spread it evenly.
    Serve warm for a gooey, cinnamon roll-like experience!
