Ingredients
1/4 cup fresh lemon juice (about 2 lemons)
1/2 cup extra virgin olive oil
1 tablespoon Dijon mustard
1 teaspoon honey or maple syrup
1 garlic clove, minced
Salt and black pepper, to taste
Zest of 1 lemon (optional for extra lemon flavor)
1 tablespoon chopped fresh herbs (such as parsley, basil, or thyme), optional
Instructions
- In a small bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, Dijon mustard, honey or maple syrup, and minced garlic.
- Whisk the ingredients together until well combined or, if using a jar, seal the lid and shake vigorously.
- Slowly drizzle in the extra virgin olive oil while continuously whisking to emulsify the vinaigrette. If using a jar, add the olive oil and shake until the vinaigrette is well mixed and emulsified.
- Add salt and black pepper to taste. If desired, add the lemon zest and chopped fresh herbs for extra flavor. Mix well.
- Use the Fresh Lemon Vinaigrette immediately or store it in the refrigerator for up to a week. Shake or whisk well before using.
