Fresh Lemon Vinaigrette Recipe – Easy, Healthy & Zesty Homemade Dressing

Description

This fresh lemon vinaigrette is a quick, zesty dressing made with simple ingredients like lemon juice, avocado oil, honey, and Dijon mustard. It’s perfect for salads, grain bowls, roasted veggies, and even as a marinade. Ready in just 5 minutes, it’s a healthy, homemade alternative to store-bought dressings!


Ingredients

Scale

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup extra virgin olive oil

1 tablespoon Dijon mustard

1 teaspoon honey or maple syrup

1 garlic clove, minced

Salt and black pepper, to taste

Zest of 1 lemon (optional for extra lemon flavor)

1 tablespoon chopped fresh herbs (such as parsley, basil, or thyme), optional


Instructions

Combine the ingredients:
  • In a small bowl or a jar with a tight-fitting lid, combine the fresh lemon juice, Dijon mustard, honey or maple syrup, and minced garlic.
Mix the vinaigrette:
  • Whisk the ingredients together until well combined or, if using a jar, seal the lid and shake vigorously.
Add the olive oil:
  • Slowly drizzle in the extra virgin olive oil while continuously whisking to emulsify the vinaigrette. If using a jar, add the olive oil and shake until the vinaigrette is well mixed and emulsified.
Season and adjust:
  • Add salt and black pepper to taste. If desired, add the lemon zest and chopped fresh herbs for extra flavor. Mix well.
Serve:
  • Use the Fresh Lemon Vinaigrette immediately or store it in the refrigerator for up to a week. Shake or whisk well before using.
