Ingredients
2 cups fresh broccoli florets, finely chopped
1 cup sharp cheddar cheese, shredded
1/2 cup breadcrumbs (use gluten-free if needed)
1/4 cup grated Parmesan cheese
2 large eggs
2 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and black pepper, to taste
Olive oil spray
Instructions
Prepare the broccoli:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
Steam the broccoli florets until tender, about 5-7 minutes. Allow them to cool slightly, then chop finely. Alternatively, you can pulse the steamed broccoli in a food processor until finely chopped.
Make the mixture:
In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, Parmesan cheese, eggs, minced garlic, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
Shape the balls:
Using your hands, form the mixture into 1-inch balls. Place them on the prepared baking sheet, leaving space between each ball.
Bake the broccoli cheese balls:
Lightly spray the balls with olive oil. Bake in the preheated oven for 20-25 minutes, or until the balls are golden brown and crispy on the outside. Turn them halfway through baking for even browning.
