For the Chicken Salad:

2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
1/2 cup dried cranberries
1/2 cup pecans, chopped (or walnuts)
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/2 cup Greek yogurt (or mayonnaise)
1 tablespoon Dijon mustard
1 tablespoon honey (or maple syrup)
Salt and pepper to taste

For the Wraps:

4 large tortillas or wraps (whole wheat, spinach, or your choice)
1 cup lettuce leaves (such as romaine, spinach, or mixed greens)
Optional: sliced avocado or additional toppings (like feta cheese or sliced apples)


Instructions

Prepare the Chicken Salad:

  • Combine Ingredients:

In a large mixing bowl, combine the cooked chicken, dried cranberries, chopped pecans, celery, and red onion.

  • Mix Dressing:

In a separate bowl, whisk together the Greek yogurt, Dijon mustard, honey, salt, and pepper until smooth.

  • Combine Chicken and Dressing:

Pour the dressing over the chicken mixture and stir until everything is well coated. Adjust seasoning if necessary.

Assemble the Wraps:

  • Prepare the Wraps:

Lay out the tortillas on a flat surface.

  • Add Lettuce and Chicken Salad:

Place a few lettuce leaves on each tortilla, then spoon the cranberry pecan chicken salad on top.

  • Add Optional Toppings:

If using, add sliced avocado or any additional toppings you desire.

  • Wrap It Up:

Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling.

Serve:

  • Slice and Enjoy:

Slice each wrap in half and serve immediately, or wrap in foil or parchment paper for a portable meal.
